The mid week crisis was getting so painful,then on Wednesday, I decided to make mathri..which happens to be DH's favorite.
Mathri is a savory homemade snack..favorite with almost everyone,eaten with spicy achar or by itself with tea.
2 cups Maida {all purpose flour}
1/2 cup Suji {semolina}
4 tbsp Oil /Ghee
1 tsp Salt
1 tsp Ajwain {carrom Seeds}
1/2 cup Luke warm water
Oil for frying
Combine maida ,suji,salt and ajwain in a bowl.
Make a well in the flour and add oil, rub the oil in thoroughly with the flour.It should be a crumby consistency.
Knead a stiff dough with luke warm water...don't get tempted to add more water if the dough is little dry...it should be come together well
Assemble the dough, without kneading it much.divide into 4 equal parts..
further divide each part into 10 small parts by pinching the dough.
You can smooth out each small ball before rolling..for an even look.
roll out each mathri..and prick with a fork ..on both the sides then let them sit for 10 mins.
Heat oil in kadhai...on med high flame..when the oil is hot then reduce the heat to med.
Check if the oil is ready by dropping a little piece of dough..it should sizzle and rise up..if it turns brown very soon,oil is very hot...
Gently drop the mathri in the oil 5-8 at a time..depending on the pan.
It takes 7-8 mins on a med heat to become golden brown..that's when they are done. Frying on a high heat will make soft mathri . Using a slotted spoon..remove the mathris on a tissue to drain.
Best served at room temp...but nothing stops you from enjoying them while they are still warm.
